- 3 Cups All-Purpose Flour
- Leftover Turkey
- 5 L Water
- 1/2 Tsp Kosher Salt
- Fresh Parsley (chopped for garnish)
- BBQ Seasoning
- 6 Large Eggs
- Goat Cheese
- Pasta sauce of your choice
- Plastic Wrap
- Fresh Parmesan Cheese (finely grated)
Instructions to make to make Turkey & Goat Cheese Ravioli
- Pour flour onto a surface and into a pile. Sprinkle 1/2 tsp of salt over the pile evenly.
- Create a well to place to the eggs and oil in. Add 5 eggs and then oil into the well.
- Use a fork to start mixing the egg and oil. As it's mixing, slowly incorporate the flour until the entire thing turns into flaky dough.
- Next, begin squeezing and forming the flaky mixture into a proper dough ball.
- Knead dough ball for 10 minutes.
- Wrap in Plastic tightly (so the dough doesn't dry out) and either let it rest at room temperature for 1 hour or overnight in the fridge
- Set up pasta roller and get out dough. Also get out a rolling pin and more flour. Flour a work surface and roll out the dough with a rolling pin until it's 1/4"- 1/8" thick. Cut into 4 pieces.
- Starting at the largest setting on your pasta roller, send pasta through once.
- Next, fold the dough twice and put it through again. Without folding, put pasta through one more time.
- Next, turn the thickness setting on your pasta roller down by 1. Send the dough through once. Repeat until your pasta is at the lowest setting or the lowest you feel it can go without breaking the dough.
- In a blender or using 2 forks, shred leftover turkey. I'm using my leftover smoked turkey meat. Place it in a large bowl.
- Place turkey in a large bowl and mix with Goat cheese and a BBQ mix. I'm using the same mix I used on my turkey, which is Maple Bacon
- Chop about 1/4 cup of parsley and put into mixture as well. Mix together.
- Lay out 2 strips of pasta dough and bring about 5L of Salted water to a boil.
- Spoon about 1 tbsp of mixture onto dough strips. Leave around 3/4" of space between each spoonful.
- Egg wash between and around each filling, then lay the other 2 strips over your current strips. Press down between fillings, until the top is sealed to the bottom entirely.
- Using a knife, pasta cutter or pizza cutter, cut each pasta into ravioli sized pasta.
- Drop pasta into boiling water and boil until all pasta begins to float. Remove pasta and dab excess liquid with a paper towel.
- Next, add and heat pasta sauce into a frying pan. Once heated, add pasta and slowly stir until the pasta incorporates the taste.
- Remove pasta and place onto a plate. Add more pasta sauce to dish, then grate desired amount of Parmesan cheese and some Coarse black pepper. Finish with some fresh Parsley for garnish.
